Pumpkin Roll
Here is a favorite holiday recipe that we like to make! We usually try to make a bunch to give away as gifts. They are so yummy and really are quite easy to do! Enjoy!
Ingredients:
3 EGGS
1 tsp BAKING POWDER
1 C SUGAR
1 tsp SALT
3/4 C Flour
2 tsp CINNAMON
2/3 C PUMPKIN
1 tsp VANILLA
FILLING
1/2 C BUTTER
1 C POWDERED SUGAR
8 OZ CREAM CHEESE
1 tsp VANILLA
OTHER STUFF
WALNUTS
JELLY ROLL PANS
NON-FUZZY TEA TOWELS
WAXED PAPER
PREPARE PAN: 10X15″ JELLY ROLL PAN. GREASE PAN, LINE WITH WAX PAPER, GREASE AND LIGHTLY FOUR WAX PAPER.
BEAT EGGS FOR 5 MIN. GRADUALLY ADD SUGAR. GENTLY STIR IN REST IF INGREDIENTS. POUR INTO PREPARED PAN.
BAKE @ 375 for 13-15 min. TURN OUT ONTO A TEA TOWEL, THEN SPRINKLE WITH POWDERED SUGAR AND 1 C FINELY CHOPPED WALNUTS. ROLL UP AND ALLOW TO COOL.
MIX FILLING. GENTLY UNROLL COOLED CAKE. SPREAD WITH FILLING AND REROLL (WITHOUT TOWEL). WRAP IN FOIL, REFRIGERATE OR FREEZE.
I HAVE MADE THEM WITHOUT THE NUTS FOR MY STRANGE HUSBAND PEOPLE WHO DO NOT LIKE NUTS!
